easy peasy fritters
(Makes 4)
1 cup frozen peas (defrost by covering with boiling water)
1 medium potato, grated
1 spring onion, sliced,
1 handful mint leaves
1/4 cup buckwheat flower
1 tbsp tapioca flour
1/4 oat milk
Salt and pepper
Olive oil for frying
𝘛𝘻𝘢𝘵𝘻𝘪𝘬𝘪 𝘴𝘢𝘶𝘤𝘦
1/2 garlic clove, grated
1/3 small Lebanese cucumber, grated
2 heaped tbsp plain Greek or coconut yoghurt (I used Goat yoghurt)
Salt and pepper
Combine all fritter ingredients in a mixing box. Remove half and place in a food processor, and blit until well combine. Add back into the mixing bowl stir through to combine. Heat a fry pan with a drizzle of olive oil, add 1/4 of the batter and form into a circular shape. Cook until the underside is golden brown then flip, cooking until the fritter is cooked through (there's no wet batter when you press on it). Repeat with the remaining mixture. Serve with tzatziki.
