matcha granola

Makes 1 large jar

2 cups oats

½ cup shaved coconut

1 cup mixed nuts and seeds

(flax seeds, almonds,

macadamia, sunflower seeds,

pumpkin seeds)

2 tbsp chia

3 tbsp rice malt syrup

2 ½ tbsp coconut oil

2 tsp matcha

1/2 cup puffed quinoa

1/4 cup goji berries


Preheat the oven to 180°C. Over a low heat, melt the coconut oil and rice malt syrup in a small saucepan. Place the oats, coconut, mixed nuts and seeds, chia and matcha in a mixing bowl. Add melted coconut oil and rice malt syrup and combine well. Transfer granola mix to a lined baking tray. Bake in the over for 20 minutes stirring a few times. Remove from the oven and add the puffed quinoa and goji berries.  Allow to cool completely before storing in an airtight container.
